Ron Smith's books "Scroll Design" and "Advanced Scroll Design" are
the bibles of scrolls.
Not sure on what are the best references for animals but I do know that books on pen & ink drawing are what you want to work with - like with engraving in pen & ink you either have a line or you don't. No smudging / smearing / blending allowed.
